Chad Minton
The Ritz-Carlton, Marina Del Rey

Ingredients
½ cup blanched, sliced almonds, finely chopped
1 egg
1 lime
1 halibut filet
Butter
Salt
Pepper
Mixed salad greens
Chives
Directions
Lightly beat egg with wire whisk. Add a squeeze of lime and whisk again. Dip halibut in egg mixture, making sure fish is very lightly coated. Roll filet gently in almonds and coat both sides. Melt 1 tablespoon of butter in a Teflon pan over moderately hot heat. Add halibut and sear on each side for 2 to 2 1/2 minutes. Do not handle or almonds will fall off. Place in hot oven, about 450 degrees for 4 minutes. Plate fish on top of mixed greens, mixed with snipped chives and dressed with honey-mustard vinaigrette. Garnish with sliced cherry tomatoes.
